Cooking Recipe Arancini rice

Ingredients (per 6 person)
200g minced beef, 2 cups of baking fund "farsumagru" Canestrato 100g, 60g of grated aged pecorino cheese, 500g of rice, 3 eggs, flour, bread crumbs, olive oil extra virgin olive oil, lard and salt .




Conduct recipe

Cook the ground meat in the bottom of farsumagro cooking for about 20 minutes. Meanwhile boil the rice al dente in salted water, following directions written on the packaging with regard to cooking times. Cut the Canestrato (cheese) cubes.
Drain rice and pour in a large bowl. Season with two eggs and pecorino cheese and mix thoroughly. Do it to cool and then take a large handful at a time, making a groove in the middle and put a tablespoon of meat sauce and a cheese cube Canestrato. Form a ball close to the filling inside dell'arancino. They are called so because the size that resembles those of a small orange.
Beat the remaining egg in a dish. Prepare the flour and the breadcrumbs in two other dishes. Go arancini in the flour, nell'uovo and finally in bread crumbs. Fry them in a non-stick frying pan in oil and lard until it forms a golden crust. Put on absorbent kitchen paper to remove excess oil. At the time of serving, passing them in the oven for a few minutes at 250 ° C. Duration: 40 minutes preparation and 45 minutes of cooking.

Tips

Can be an excellent single plate with a salad of the season or another type of contour. They are also an ideal choice in establishing a snack or a buffet (in this case to consider a head).

- We have replaced the farsumagru this with meat sauce. We have put in a pot the following ingredients: 2 tablespoons extra virgin olive oil, 200g minced veal, 150g of tomato sauce, 1 tablespoon chives, chopped 1 onion, 1 tablespoon chopped parsley, 1 teaspoon of bay leaves dry, a box of 200g for drained peas, 150 ml of wine, a pinch of salt. We have not added water, and we cooked on a moderate flame until the sauce has not taken very well.
- We used, instead of baskets, cubes of mozzarella cheese for the guests who tolerate little cheese. In this case we have also replaced the parmesan with pecorino, even very small quantities.
- We have the fried arancini without lard, only with olive oil.
