Prepare a mixture of herbs (removing those that are not to your liking) and amalgamale with extra virgin olive oil. Apply the seasoning on both sides of the Florentine. Then grill the meat (3 minutes per side for optimum cooking, cooking for 4 average) to mark both sides (never move the piece at this stage). Considerably lower then the flame and cook even the cost for a time as you wish (from 2 up to 5 minutes). Serve eg scamorza smoked (if you have not done before adding the salt).
