Clean the mussels, put them in a saucepan, cover them and open a medium high flame. Drain and keep aside. Filter the liquid formed, add 75cl of water (one bottle) and bring to boil. To toast the bread in the oven to 220 degrees. Cut the tomatoes into pieces and cook them on low heat for about 20 minutes. Combine the boiling broth with the bread in pieces and the crushed garlic and let simmer for 40 minutes. Turn off, add the basil and oil. Pepper mussels, shelled and mostly distributed in dishes, pour la pappa al pomodoro and serve.
